So I am back here to celebrate a special day. Yesterday was an anniversary of sorts. My cancerversary. It's a real term in the cancer world. I did not coin it, though I wish had. Some people celebrate on the anniversary of the day they were diagnosed, or last day of treatment, or day they were NED (no evidence of disease). I might celebrate on all of these dates, because why not? </div>

Last year on June 7th I found out that I had cancer. The tumor I had was indeed the dreaded cancer. Stage 2b breast cancer, Invasive ductal carcinoma. After that most of the past year was a giant whirlwind of tests, doctor appointments, chemo, radiation, hospital, surgery. Not super fun. Or easy.</div>

But through it all I had amazing, like ridiculously amazing support. I don't know how others do cancer, hardness, or just life in general without it. My support was trifold. You know those painted, rustic signs that say Faith, Family, Friends. Well, they don't lie. That really is what it's all about. My faith was sure tested and tried and then some more. But God never left my side. Not in the chemo lab or the long anxious nights of unanswered questions or the draining hours of waiting for results. I was never alone. </div>

And speaking of alone, I really wasn't ever alone. Because my husband formed his every minute around me and my needs to get our family through as seamlessly as possible. He basically was an angel. And my mom, who was at my house constantly, night and day to care for me and my Ella. And well Ella, my cuddly and lovey, never tired, but cutest one year old lil' girl stayed right next to me. And I really do mean right next to me. I could name everyone here but it would be the longest document ever. My whole family, each member gave up all their free time and rearranged their lives to be our support system. It was way, way above and beyond what was expected. They babysat, cleaned, drove, and cared for every aspect of day to day living. Speaking of day to day life, our church cooked meals for us so we never worried about finding time to food shop or cook. Our friends were constantly there for us in any way we needed. </div>

And most importantly, I had more people praying for me than I had ever met or ever thought would possibly cared to care for a stranger. I felt loved on in every direction. That is just what got me through each and every minute of treatment, stress, and fear that reigned over this past year.</div>

But enough of that, after 10 months of active treatment I am finally at a place to relax and celebrate. I have no evidence of cancer in my body. Aside from mammograms and MRIs check ups and hormone therapy I am currently doing, my life is much less cancer dominated.</div>

Now I can focus on living, not preventing dying. I can enjoy my family and friends. I can rest easier.</div>

As a way to celebrate my "cancerversary" I made these easy but cute pink cupcakes. I shared them with some people who were part of that wonderful support system I mentioned earlier. </div>

Then Robert and I ordered out from our favorite Italian restaurant and had a delicious dinner. Cupcakes and Chicken Alfredo. That's my idea of celebrating.<br />

I wanted to bake, but not do something super detailed or intense so I could relax and enjoy this day too. So I cheated. I used a boxed cake mix. Gasp. I doctored it up some and added pink sprinkles to the batter for some festive fun. </div>

For the icing, I found through the ever addictive Pinterest the easiest way to make faux fondant-like icing. I loved it. So simple. I will be doing this frequently.</div>

All you need is one can of store bought frosting, a microwave and bowl, and something to stir with.</div>
<div>

And I added food coloring. Pink gel based. But any dye will do.</div>

Here's what you do.</div>

1. Scoop frosting into microwave safe bowl.</div>
<div>

2. Microwave for 15 seconds. Stir well.</div>
<div>

3. Microwave for 20 more seconds. Stir well again. </div>

<div>
4. If you wish to add coloring, now is the time. Stir in a few drops of liquid or small amount of gel and mix till incorporated.</div>
<div>

<div>
5. If air bubbles rise to the surface pop them with a whatever utensil you have nearby. </div>
<div>

<div>
6. Dip your cupcake top into the icing and let excess icing run off. The icing will be thin, but don't be alarmed, it sets up quickly. Surprisingly quickly. And you can double dip too. I did two rounds with these cupcakes though it's not entirely necessary. </div>

7. Be sure to add any sprinkles or small decoration before the icing sets. </div>
<div>
<br /></div>
<div>
Now let the icing finish setting and enjoy these faux fondant cupcakes.</div>

So there are days that the crockpot can really be your best friend. Busy days. Stressful days. Lazy days. Hot days when you don't want to turn on the oven. Crockpot to the rescue! Here is a super simple, man satisfying, looks-like-you-worked-hard-but-watched-the-office-while-cutting-coupons-instead kind of dinner. Just a few ingredients and a few minutes to throw together and then come back hours later to delicious dinner!<br />

<br />
3 lb beef rump roast<br />
16 oz can beef broth (maybe a lil more depending of size of crockpot)<br />
1 packet of onion soup mix<br />
1 tbsp worcestershire sauce<br />
3 minced garlic cloves<br />
Sliced provolone<br />
French or Italian crusty bread or roll (like a baguette)<br />

<br />
1. Place the roast in the bottom on crockpot. Add broth, onion soup mix, worcestershire<br />
, and garlic in crockpot. Check to be sure the meat is covered with broth. If not, add more broth or water to be sure it's fully submerged. <br />
<br />
2. Cook on low for 9-10 hours. <br />
<br />
3. Slice baguette or rolls and toast in oven for a few minutes. Place sliced provolone on the bread/rolls and return to oven for a minute or two, just long enough to melt. <br />
<br />
4. Remove meat from crockpot. Slice meat and pile up on toasty, cheesy bread. Reserve leftover juices in crockpot for dipping. Don't skip this step! The au jus makes this sandwich so incredible!<br />

1. Fit a piping bag with any round tip and fill with soft herbed cheese.<br />

2. Using a pairing knife, make two perpendicular cuts from the narrow tip of the tomato toward the base. Only go about 3/4 of the way down. Do not cut all the way through!<br />

3. Pipe cheese into the center where the cuts overlap. You will have to use your fingers to pry the opening a bit.<br />
<br />
4. Arrange filled tomatoes on the platter. Place cut asparagus stems on platter to mimic tulip stems.<br />

Anyone who knows me well knows I LOVE Pinterest!! It's basically my favorite internet pastime. It has something for everyone. Even my husband, who loathes Facebook and the like, enjoys the humor boards and DIY building stuff pins. Well, I saw this on Pinterest last year and thought it was just the cutest Easter themed food and I had to make it. If you are looking for a cute addition to your Easter table, try out this Easter bunny bread filled with Spinach Artichoke dip and surrounded by cut veggies. You can use the veggies or the bread for dipping. Both taste great! Happy Easter!<div>

1. Cut off the top circle of the round loaf carefully to make the bunny's face. Hollow out the body by ripping pieces from the inside of the round loaf to set aside for dipping, as well as, make room for the dip.</div>

2. Cut the ends of the baguette off for the bunny's ears and place on tray above the round bread/bunny's head. Rip/slice the leftover middle section of the baguette and add to other bread pieces for dipping.</div>

3. Slice an olive in half for bunny's eyes and quarter an olive for a piece to use as the center of the nose. Thinly slice a small piece of celery for the whiskers. Arrange bunny's face on the round top piece of bread.</div>

Yep, five years since we said I Do. It's a long time. We have laughed and cried together. And I'm so blessed to go through life with him. He's just the coolest guy in every way. <br />

My husband is "that guy". That guy who holds open doors and cares for everyone. That guy who likes spending time with me as much as possible. He's that guy who cares for my friends and family like they are his own. He's that guy who always wants to help the world and will lend a helping hand to anyone. He's that guy who's can build a wall or fix or a door, but will also helps with fill piping bags and ice cookies (and he's good at both!). He's the guy who reads devotions to me at night even though he's tired and always thinks of my needs above his own. He's that guy who works hard and loves his job and his students.<br />
<br />
So yeah, he's pretty awesome.<br />
And I'm pretty lucky.<br />

Many helpful tricks for decorating with royal icing. My favorite part... NOT SIFTING! I have been sifting sugar like an idiot all this time and guess what? It made no difference. Every year for New Year's Eve, we head to my aunt's house for a lovely time ringing in the next year of memories and excitement! There is always tons of food, fireworks, games, and friends to help celebrate. I knew we were planning to play a bunch of board games, so I figured finger foods would be something useful to bring. So I used a variation of my grandma's baked macaroni and cheese and instead of baking it in a large rectangular pan, I used cupcakes pans and colorful wrappers. It made mac and cheese into a portable and cute savory cupcake. Make these for your next party and see them disappear!<br />

For January's What's Baking Challenge, Eva from <a href="http://evabakes.blogspot.com/">Eva Bake</a>s, gave us the challenge to make something with small portions. So I figured these macaroni and cheese cupcakes were perfect! You get your own 'lil cup for just yourself! Of course, you can have more than one if you really want. In fact, I recommend it.<br />
<br />
1 lb mini shells<br />
2 1/2 cup 1% milk<br />
1 cup heavy cream<br />
1 tbsp butter<br />
2 tsp salt<br />
1 tbsp black pepper<br />
1 tsp ground mustard powder<br />
1 tsp nutmeg<br />
1 tbsp black pepper<br />
1 cup cheddar cheese, shredded<br />
8 oz Velvetta<br />
1/4 cup grated parmesan or pecorino cheese<br />
<br />
1. Heat milk, heavy cream, butter, salt, pepper, mustard, nutmeg, and paprika in a large pot over medium heat. Stir to combine all ingredients.<br />
<br />
2. Add pasta and continue stirring constantly until it reaches a simmer. Then turn the heat down to low.<br />
<br />
3. Continue stirring while the cooking the mac and cheese on low for about 12-15 minutes. The macaroni must always be submerged in the milk mixture, if the liquid evaporates too quickly add a little more milk and make sure the heat is on low.<br />
<br />
4. Remove from and immediately stir in cheese until melted and combined. Let the pasta cool for a few minutes and prepare the pans. Line the muffin pans with cupcake liners.<br />
<br />
5. Using a cookie or ice cream scoop, fill the cupcake liners with mac and cheese.<br />
<br />
6. Pop pans into a 350 degree oven for 15 minutes. Remove from oven and enjoy!<br />

For cupcakes:<br />

3/4 cup water<br />
2 tsp vanilla<br />
1/2 cup softened butter<br />
3 eggs<br />
<br />

For chocolate ganache:<br />
1 cup bittersweet chocolate, chopped<br />
1/2 cup heavy cream<br />
white decorating icing<br />
colored candies (M&M, Reese's Pieces)<br />
<br />
<br />
1. Mix all ingredients for cake in a large bowl to combine.<br />
<br />
2. Line cupcake pan with wrappers and scoop batter in each cup (about 2/3 full).<br />
<br />
3. Bake in a 350 degree oven for 12-15 mins. Let cool.<br />
<br />
4. While cupcakes cool, heat heavy cream in microwave for about 2 minutes. Pour over chopped chocolate and let it sit about 5 minutes.<br />
<br />
5. Stir thoroughly until chocolate and cream are fully incorporated. Let cool. Beat on medium high speed for a minute or two, until fluffy and spreadable.<br />
<br />
6. Arrange cupcakes in a football shape on a cake plate or baking sheet. Spoon dollops of whipped frosting all over the cupcakes. Use a knife to carefully spread frosting across all the cupcakes tops, like they are one unit. If the frosting is not spreading easily, dip the knife in a cup of hot water and then try again.<br />
<br />
7. Fully cover the cupcake cake with frosting and even out the frosting. Sprinkle candies around the edge and pipe on football ties in the middle. Enjoy!<br />

Well, I know the holidays are officially over with the passing of Epiphany, and all that is left is football. Now, I'm going to be completely honest with you. I couldn't care less about football. The only appeal it has for me is the food. I watch the Superbowl for the commercials, but everything else you can take. I do, however, enjoy Superbowl parties. I like themes, and themed foods. I have made football pull apart cakes and even attempted those football Oreo truffles from pinterest (which I failed at). That is what I like about sports. The food. So without further ado, here is a great Super Bowl/football appetizer to share.<br />
<br />
1 round loaf of french or Italian bread (I used a french boule)<br />
1 pkg or stick of pepperoni, thinly sliced and halved<br />
8 oz soft provolone, thin sliced<br />
8 oz mozzarella, shredded<br />
2 tbsp butter, melted<br />
1/4 cup olive oil<br />
2 tsp garlic powder<br />
1 tsp onion powder<br />
1 tsp oregano<br />
1/4 tsp salt<br />
2 tsp black pepper or peperoncini flakes if you are feeling daring<br />
1 tbsp pecorino or Parmesan cheese<br />
<a href="http://ouritaliankitchen.blogspot.com/2010/06/thin-crust-grilled-pizza.html">marinara sauce</a> for dipping<br />
<br />
1. Cut the bread lengthwise and widthwise, very carefully, without cutting through the crust. It doesn't have to be perfect so don't stress!<br />
<br />
2. Stuff the bread with provolone, mozzarella, and pepperoni. Place stuffed bread on a parchment lined baking sheet.<br />
<br />
3. Combine butter, olive oil, and seasonings. Brush over the bread to cover entire loaf and then sprinkle with grated cheese. Cover with foil.<br />
<br />
4. Bake in a 350 degree oven for 15 minutes and then unwrap and continue baking another 10-15 minutes until the cheese and pepperoni are slightly crispy.<br />

Try this new spin on classic pancakes for a delicious Saturday morning breakfast. I love bacon. Everyone loves bacon. In my house, it's pancakes and bacon or no pancakes at all. I mean, pancakes are good, but they need a counterpart, another component to make them perfect. And bacon happens to fill that spot.<br />
And my husband will never eat pancakes with maple syrup, ever. So I decided to embrace our love of bacon and maple syrup and try adding it to pancakes. It turned out great!<br />
<br />
2 cups flour<br />
2 tsp baking powder<br />
1 tsp baking soda<br />
1/4 tsp salt<br />
2 tbsp sugar<br />
2 eggs<br />
1 1/2 cup buttermilk<br />
2 tbsp maple syrup<br />
2 tbsp melted butter<br />
6-8 slices bacon, cooked and crumbled<br />
<br />
1. Mix all dry ingredients, except the bacon, together in a bowl and set aside. In a separate bowl, stir all the wet ingredients together.<br />
<br />
2. Combine both mixes together and stirring only enough to incorporate the two batters.<br />
<br />
3. Fold the bacon into the batter gently and let batter rest for about 10 minutes.<br />
<br />
4. Pour it onto a heated griddle or electric skillet and flip pancakes when bubbles form on the pancake tops. Eat warm, served with butter and maple syrup. Happy breakfast time!<br />

People always say how kids hate eating their vegetables. I know this because I was that kid. I ate maybe ten foods, none of which were nutrient rich. I was such a picky eater and I'm not entirely over that. There are still plenty of foods that make me squirm, but I did finally embrace veggies and found such delicious and healthy ways to prepare them. This is one of my husband's favorite veggie sides for dinner.</div>

6 cloves of garlic, minced or crushed</div>

3 red potatoes</div>

1. Saute the onion and garlic with olive oil and a sprinkle of salt over medium heat until softened. Set aside to cool.</div>

2. Slice the potatoes and vegetables into thin round disks. <br />

3. Spray a square baking dish with non-stick cooking spray. Scoop half of the onions and garlic into the bottom of the baking dish. <br />
<br />
4. Layer the veggie and potato slices vertically, in an alternating pattern. Then top with salt, pepper, and tbsp of olive oil. Spread the remaining garlic and onions over the veggies and cover with foil.<br />
<br />
5. Bake in a 400 degree oven for 30 minutes. Remove foil and sprinkle shredded cheese on top. Return to the oven for another 15 minutes until the cheese is golden brown. <br />

His brothers and sisters and all their kids, grandkids, and now even great grandkids, get together to eat, dance, and take tons of pictures. It's such a nice gathering and tradition that we all love. We always make my Grandma's classic cookies (which I'm planning to share soon) and I also made these Christmas shaped sugar cookies.<br />

As you know, I love making cutout cookies so much. I have made many shapes, sizes, and kinds, but the materials are generally the same, sugar cookies + royal icing= decorated sugar cookies. Now I love this formula for making decorated sugar cookies, but I will admit when making a large batch of say, 100 cookies or so, it can be time consuming. And though I do enjoy taking the time to decorate, design, and be creative sometimes you don't have as much time to dedicate to decorating. So here comes the perfect solution for quicker cookie decorating that is still terribly cute. Instead of royal icing or fondant, try this glaze icing. It's so very simple and looks great. It hardens to a stackable point, similar to royal icing, but not quite as stiff. Give it a try next time you are pinched for time or just want to try a new kind of decorating.<br />

Cookie Dough:<br />
<br />
1 cup sugar<br />
2 sticks butter, cut into cubes<br />
1 egg<br />
2 tsp vanilla<br />
1 tsp almond extract<br />
3 cups flour<br />
2 tsp baking powder<br />
pinch of salt<br />
<br />
Glaze:<br />
<br />
2 cups powdered sugar<br />
1 tbsp corn syrup<br />
2 tbsp milk or water<br />
1 tsp clear extract (vanilla or almond)<br />
green gel food dye<br />
sprinkles/sugar crystals<br />
<br />
<br />
1. Cream butter and sugar on high until well mixed. Add in egg and extracts and continue to beat.<br />
<br />
2. Slowly add in dry ingredients while mixing. Remember to scrape down sides of the bowl.<br />
<br />
3. Knead the dough briefly and roll out on a floured surface. Cut into your desired shape using cookie cutters.<br />
<br />
4. Place on parchment lined baking sheets and bake in 350 degree oven for 9-11 minutes, until very slightly golden brown.<br />
<br />
5. Set cookies on racks to cool while making glaze.<br />
<br />
6. Mix powdered sugar, corn syrup, and milk in a bowl. If your glaze is too thick, add 1 tsp more milk or water and if it becomes to too thin add some powdered sugar. (For candy canes and Christmas trees, make one batch regular white glaze and a second batch with green dye)<br />
<br />
7. To decorate, put glaze in ziploc or piping bag and cover cookies with glaze and use a utensil to help spread and smooth out glaze. Use festive sprinkles or sugar crystal to decorate if desired. Let glaze set up on baking racks until fully dry and hardened.<br />

1. Beat butter and sugar on medium speed until light and fluffy. Add in egg and vanilla and continue to beat. </div>

2. Mix flour, baking powder, cinnamon, pumpkin pie spice, and salt in a separate bowl. Slowly add dry mix while beating on low.</div>

3. Wrap ball of dough in plastic wrap and refrigerate for 15 minutes. Take out of fridge and roll into balls then flatten with your hand. These cookies retain their shape well.</div>

The trees, the leaves, the orchards, the weather, the hoodies, the campfires. It's so fun! And not to mention the fall themed food that go right along with this season, all things caramel, cinnamon, apple, cider, nutmeg, and pumpkin. It's literally all my favorite things.</span><br />

His coworkers do this tradition called a friendship plate. The staff is divided up into list and each list gets cute dish which the first person must fill with sweet treats and then pass to another person on your list. After you enjoy your treats, you fill up the plate with sweets and pass it on to someone else. By the end of the year everyone has been gifted a dish of goodies. Isn't that so sweet?</span><br />

Yes, I did try some of the scraps before wrapping up the rest of them and yes, I will post the recipe soon. And I made cupcakes shaped like apples. This is so easy and so cute, I had to share how to make your own apple cupcakes on here. </span><br />

<span style="font-family: Arial, Helvetica, sans-serif;"> The cupcakes can be homemade, box, whatever. I happened to get a caramel apple box mix on sale for 88 cent last week so I cheated this time. I added cinnamon and caramel extract to help it out. Then choose your favorite icing and simply spread it on evenly to make a nice dome shape. </span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Now here's the fun part. Take white sugar and put it in a ziploc bag. Add a few drops of red gel food coloring. Zip the bag and smush! Knead the sugar, toss the sugar. Just keep mixing it until all the dye has been well mixed into the sugar and the sugar is now completely red. </span><span style="font-family: Arial, Helvetica, sans-serif;"> </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Then pour the sugar in a small, shallow bowl (I used a coffee cup) and dip the frosted cupcake in upside down, paying attention to fully cover all the icing with red sugar. </span><br />

My poor hubby had to have a procedure last week, and any of you who have had one know that you can not eat for 24 hours before most procedures. My husband basically thought this was the end of the world. "Umm...No food for how long?" was all he could talk about. Gatorade, Italian ice, and broth were not acceptable forms of food for Robert. So he kept "reminding me" me that he would loooove stuffed shells as a reward for going through his difficult time. Well what could I say? Of course, I made him stuffed shells for dinner that night.<br />
<br />
<br />
1 box large shell pasta<br />
<a href="http://ouritaliankitchen.blogspot.com/2010/06/thin-crust-grilled-pizza.html">Sauce</a><br />
1 lb ground beef, cooked and drained<br />
2 lb ricotta cheese<br />
Fresh parsley, chopped<br />
2 eggs<br />
3/4 cup Pecorino or Parmesan cheese<br />
1/2 tbsp salt<br />
1 tbsp pepper<br />
1 lb mozzarella, shredded and divided<br />
<br />
1. Boil shells until slightly undercooked, or al dente. Drain and set aside. Don't worry! They will bake in the oven and finish cooking later.<br />
<br />
2. Set aside some mozzarella cheese for topping. Stir ground beef into sauce.<br />
<br />
3. Mix ricotta, eggs, parsley, most of the mozzarella, pecorino, salt and pepper in a large bowl to blend.<br />
Using a spoon, open the shell and fill with cheese mixture.<br />
<br />
4. Pour a tiny bit of sauce to coat bottom of large glass baking pan. Place stuffed shells opening up into baking dish and continue until all shells are filled.<br />
<br />
5. Pour sauce over the tray full of shells and top with mozzarella.<br />
<br />
6. Bake at 350 degrees for 35-45 minutes. Let cool and enjoy!<br />

we were challenged to make scones by Jaida from <a href="http://sweetsbeginning.blogspot.com/"><span style="color: #0025e5;">Sweet
Beginnings</span></a>! I'm a big fan of starbucks cinnamon chip scones so I
immediately decided to try to make something like that and they turned out
fantastic. However my husband requested scones with raisins so I combined
two recipes to make one awesome scone, rum raisin cinnamon scone! And it turned

My husband refuses to eat breakfast in the kitchen like a normal human being, unless it's the weekend. It could have something to do with his crazy long commute. I guess waffles and syrup in the car could lead to some sticky situations...<br />

So therefore I need to have all portable, easy to grab and eat while driving type foods for his breakfast. It does limit many of the classic breakfast foods. Since he's a huge fan of banana bread, I decided to try this muffin variation on <a href="http://ouritaliankitchen.blogspot.com/2010/09/banana-raisin-bread.html">classic banana raisin bread</a>, which usually gets sliced and put into individual baggies. It's definitely easier to pop in your mouth while holding a steering wheel. My husband also really loved the cinnamon sugar crusty tops. Hope this makes your breakfast commute a lil easier!<br />

Muffins:<br />
<br />
3 Bananas, well-ripened<br />
1 cup of sugar<br />
1/3 cup corn oil<br />
2 eggs<br />
1 1/2
cups flour<br />
1 tsp baking soda<br />
1/2 tsp salt<br />
1 1/2 tsp vanilla<br />
2 tsp cinnamon<br />
1 1/2
cup raisins<br />
2 cups water (for soaking raisins)<br />
1/2 cup walnuts, chopped
(optional)<br />

Topping:<br />
3 tbsp butter<br />
3 tsp cinnamon <br />
1/4 cup sugar<br />
<br />
1. Heat 2 cups of water in microwave or stove top. Add in raisins and set aside to plump.<br />
<br />
2. Mash bananas in a large bowl and add all other ingredients.<br />
<br />
3. Remove raisins from water and pat dry. Gently fold raisins into batter.<br />
<br />
4. Fill muffin tins, lined with wrappers or greased with cooking spray. Bake at 350 degrees for 20-25 minutes.<br />
<br />
5. Melt butter in microwave. Pour sugar and cinnamon into a separate small bowl.<br />
<br />
6. Dip the cooled muffins into the butter and then immediately into cinnamon sugar. Eat hot or cold, either way they are great!<br />

I had the pleasure to make some treats for a sweet friend of mine's bachlorette party last weekend. We had a great time getting pampered and massaged, then having a fantastic Italian dinner, a limo ride, and dancing to end the night.
